It is formulated to minimise the liberation of gas in cold adapting completely to the necessities of the confectionary industry. Function Chemical leavening agent. Uses Used in milk shakes, sponge cakes, puddings, cakes, alfajores, cookies and specially in those which need leavening and don't take yeast in their composition. Levels of Use 20 - 50 gr. by Kg. of flour according to the speciality.
