Function

Doble Enlace EcoPan® is a multi-purpose bread improver which acts on the main components of flour conditioning and strengthening dough structure. It replaces the action of Potassium Bromate in most bread-making systems, including Tablas Process, Straight Dough Method, Sponge and dough.

Uses
Doble Enlace EcoPan® is especially recommended for processes with long fermentation times (Tablas Process 8-12 hs.) or processes which require high levels of oxidation (frozen Dough). Doble Enlace EcoPan® can be used with excellent results in the production of: French bread, baguettes, homemade bread, sliced bread, rolls and buns, bran bread, hot dog and hamburger bread, English muffins and in all types of yeast-raised products.

Usage
In order to obtain the best results it is important not to dissolve the additive previously in water !! It must be added during the final stage of the kneading process, to a firm and well-refined dough. Knead until the product is evenly mixed.
Do not desgasify the dough in excess (4-5 turns of the kneading machine).

Levels of Use
The recommended use level of Doble Enlace EcoPan® is 750 gr. per 50 kg. of flour (1.5%). However, the product can be used with the same criteria applied to the use of bromate. This quantity can be increased or decreased according to the different room temperatures, quality of flour (stronger or weaker), as indicated by the baker's experience and choice.

Labeling Information

All the ingredients of Doble Enlace EcoPan® meet the Food Chemical Codex purity requirements and are authorized for their use in bread making by the U.S. Food and Drug Administration (FDA).
