Function This natural anti-hardener is a mixture of enzymes that specifically modify starch, and as a consequence the products keep their humidity and stay fresh for a longer period of time. Uses It is especially recommended for: rolls, hamburguer buns, hot dog bread, pizzas, butter croissants, sweet rolls, panettone and any kind of product, in order to improve their texture and enhance their freshness. WARNING: This product does not contain oxidizing agents and, if necessary, must be included upon decision of the baker. Usage The enzymatic components of the Doble Enlace® Freshness Extender are easily soluble in water. This product may be added without problems to the other ingredients during the first stage of the kneading process. Levels of use
