Sodium Bicarbonate - Ammonium Bicarbonate

Introduction

Sodium Bicarbonate provides carbon dioxide when the moisture and temperature conditions are adequate, even without the presence of acids (although in very small quantities and producing an alkaline medium).
Ammonium Bicarbonate breaks up into ammoniac and carbon dioxide (that is why the medium is not alkalized) under adequate moisture and temperature conditions.

Function
Sodium Bicarbonate: Acidity regulator,
leavening agent, antiagglutinant, antihumectant, stabilizing agent.
Ammonium Bicarbonate: Acidity regulator,
leavening agent in production of thin baked goods .

Usage

Sponge cakes, baking powders and in all bread-making products that do not have yeasts in their composition.
