L-ASCORBIC ACID flours improver for baking. FAT COATED
Introduction
The Ascorbic Acid is a group of four stereoisomers, where the isomeric L-tri-AA
or vitamin C is the only one which possesses activity like improver of flours.
The Ascorbic Acid is a reducer that should pass to its oxide form (Ascorbic Dehydro Acid) to be able to exercise its effect of mass enhancer. From
the kinetic point of view, the Ascorbic Acid, acting as DHAA, is an oxidiser
of intermediate speed. In a first step a present enzyme intervenes in the
flour, called L-ascorbic-Oxidasa. Later, on a second stage and due to the
presence of another enzyme in the flour, the Dehydro-L-ascorbic -Reductase
(using Glutathione like cofactor), the Ascorbic Dehydro reacts on the groups
tiol (-SH) forming the disulfur bridges (-S-S) being regenerated the Sour
L-tri-AA at the same time.

The Ascorbic Acid is recovered with hydrogenated vegetable oil (food grade), achieving this way to minimise the losses for oxidation-degradation. Besides this form of product is made without tendency
to agglutinate during the storage and easy handled.
Function
Improver of bakery flours. Antioxidant, especially for emulsions. It prevents
the enzymatic brownish in cut fruits, pulp of fruits and juices. Colour
preserver for meat.
Uses
The Ascorbic Acid (vitamin C) acts as oxidiser when it is incorporated
to the dough, so it facilitates its work, it improves the body and the
development in the cooking, increasing the tenacity of the gluten. It
is used in: fruits concentrated, butter, beers, not alcoholic drinks,
gassy, powdered and concentrated milk, marmalade and fruits preserves.
Levels of Use
According to BPF Labelling This product complies with all the requirements
of the Argentinean Alimentary Code, standards of the U.S. Code of Federal
regulation (FDA: Food and Drug Administration) and positive list of E
preservatives of the European Economic community (EEC) under the number
E 300. Minimum 94% AA.
