Introduction
Sodium benzoate is the sodium salt of benzoic acid. Benzoic acid is found in its natural state in several edible berries. Usually, its alkaline salts (e.g., sodium benzoate) are used in the food industry, since benzoic acid is not very soluble in water.

Function
It is a bactericidal and fungicidal Preserver.

Uses

It is generally used in: carbonic beverages, fruit salad, juices, jams, jellies, caviar, margarine, candy, fruit cakes, sauces, etc.

Usage
This preserver is effective only in a slightly acid medium. In most cases, it is used combined with other preservers.

Levels of use
Generally, 0.5 - 1gr of sodium benzoate per kg. of product.

This product complies with all the requirements of the Argentine Food Code, standards of the U.S. Code of Federal Regulation (FDA: Food and Drug Administration) and positive index of E additives of the European Economic Community (EEC) under the number E 211.
